Zucchini Fries

It’s one of those evenings, where I’ve eaten fairly heavily, but three hours later I am starving, and I know I’ll not make the night without some form of snack.
In prior years, I’d hit the local pub for a plate of wings and fries, sided with a pint, but given COVID and the brutal winter weather, I’ll have to do something at home.
Prowling around I find a pair of zucchinis, I was going to stew, but looks like they are perfect air-fryer fodder.
I’ll wash them, then top and tail, and produce 1/2″ x 1/2″ x 2″ batons, give them a toss in seasoned ap flour, a dip in a beaten egg, and a roll in a panko and parmesan.
Thence off we go to the air fryer for a fry until golden brown and delicious.
Now any fry, zucchini, potato, sweet potato, etc, etc, is not complete with out seasoning. So I’ll knock together a quick and dirty “Magic Dust” seasoning. I do not know where that term came from, but it’s been used to label fry seasoning for the better part of 20 years around the Bad Wolf Bar and Grill.

Fast Zucchini Fries
Equipment
- Air Fryer
Ingredients
Zucchini Fries
- 2 ea Zucchini Wash, and cut to 1/2" x1/2" X 2" batons
- 1/2 Cup AP Flour
- 2 ea Eggs Jumbo, beaten
- 1 cup Panko
- 1/2 cup Parmesan Grated
- 3/4 tsp Garlic Salt
- 1/4 tsp Cayenne
- Salt To Taste
"Magic Dust" Seasoning
- 1 tsp Onion power
- 1 tsp Salt
- 1 tsp Paprika I like smoked
- 1 tsp garlic powder
- 1/4 tsp Dried Oregano
- 1/4 tsp dried basil
- 1/4 tsp black pepper
- 1/4 tsp cayenne
Instructions
Magic Dust
- Add all to spice grinder and process finely. Alt, use a mortar and pestle, and go for broke
- Taste and adjust as necessary
Zucchini Fries
- Preheat Air Fryer to 400, lube basket with cooking spray
- Mix the panko and parmesan
- One might season the flour with a tbsp of the seasoning mix
- Setup dredge station for zucchini batons
- Dredge batons in flours, egg and panko
- Fry in a single layer for 4-6 minutes, until golden brown and crispy
- Season to taste, while hot. Use of a spice mix is optional, but recommended.
