Chilli Mushrooms
One of my favorite Indian restaurants has a 5 star dish called Mushroom Chilli. I’ll attempt to recreate here
‘A simple healthy stir fry recipe that’s perfect for a home preparation. This is almost same as restaurant style popular Indo chinese chilli mushroom except I’ll not deep fry the mushrooms.
The restaurant version batters and deep fries the mushrooms then tosses with a glorious sauce. But the recipe shared here is stir fried. I’ll use a generous amount of olive oil that gives a great flavor and taste.
Chilli Mushrooms
Ingredients
- 2 cups Mixed Mushrooms or Button Cleaned, Quartered
- 1 cup Bell Pepper Washed, Cubed to match Mushroom Size
- 1 cup Scallions Washed, Rough Chopped
- 1 ea Sweet Onion Medium, Peeled, Cubed
- 2 tbsp olive oil Decent stuff for frying
- 2 tbsp Chili Garlic Sauce Sambol
- 1 ea Chili Jalapeno Washed, seeded, Diced
- 2 tbsp Tomato Ketchup
- 1/4 tsp cayenne pepper TO TASTE...
- 1/2 tsp Corn Starch
- 1/2 cup Water Warm
Instructions
- Heat a wide skillet with oil on high
- Add sweet onion and sauté until tender and translucent, ~ 5min
- Add garlic and sauté for a min to get a good aroma. Add mushrooms and Jalapeno. Saute for 2 mins. Cover and cook until the mushrooms are half done.
- Add the peppers and spring onions, toss and fry till the peppers are almost cooked but not soft. Make sure mushrooms are cooked as well.
- Mix corn starch, sambol, ketchup, soy sauce and water in small bowl
- Add the sauces to the skillet evenly. Add cayenne powder. Toss and bring to a boil or until the sauce thickens.
