Air Fried Okra Patties
The day is grey, cold, depressing. So off to the kitchen for a bit of stress relief in the shape of a childhood side dish, fried okra fritters, or patties. But I’ll lighten them up a bit by using an air fryer versus deep or pan-frying.
Air Fryer Okra Patties
A quick vegetarian side dish
Equipment
- Air Fryer
Ingredients
- 1 lb Frozen Okra Thawed, chopped
- 1/2 ea Onion Peeled, chopped
- 1 tsp Salt
- 1 ea Jalapeno Washed, cored, minced
- 1/2 tsp Black Pepper
- 1 ea Egg Jumbo
- 1 tsp Baking Powder
- 1/2 tsp Baking Soda
- 1/3 cup Buttermilk or whole fat milk
- 1/2 cup AP Flour
Instructions
- Combine okra, onion, salt, pepper, and egg and mix well.
- Mix flour, baking powder, and cornmeal and add to okra mixture, mixing well
- Add dairy in small amounts looking for a stiff mixture
- Let stand 5 minutes to hydrate, adding dairy in tbsp to adjust texture
- Using a 1/4 cup measure, form into patties
- Preheat air fryer to 400
- Place on fryer basket, do not crowd
- Air Fry approx 8 minutes per side, 16 minutes total
Notes
Just a quick little number, using what I happen to have in the fridge.
A perfect snack, great as a side dish, and I have been known to stuff myself with the entire batch.
Great with a bit of butter or dipped in your condiment of choice.
