Baby Blooming Onions

Crispy and spicy on the outside, sweet and creamy on the inside, and coated in a glorious dipping sauce, these are destined to become a holiday show stopper.

Madam BadWolf found a similar recipe on TikTok and commanded me to produce this dish as an evening snack. While the video used pearl onions that had been thawed in cold water, I opted to use the microwave to not only thaw the onions but to give them a par-cook.

I will note to make sure you purchase pearl onions that do not have a sauce. One can find mixed pearl onions, white and red, for a taste and texture variety.

I use the seasoned flour from my chicken fried steak post and control the salt. I have experienced the Blooming Onion in restaurants and found it overly salty. (One supposes they use this to drive drink sales.)

For the purest, one can acquire and peel by placing them in a small bowl and microwaving them for 40-60 seconds, thence slipping the skin off like peeling a clove of garlic. Next, cut the root end of the pearl onion with a paring knife and press from the top. The onion should slip out easily. If not, cut a larger piece from the root end.

Equipment

  • 1 sheet pan
  • 1 Wire Rack To fit above, oven safe
  • 1 Oil Mister Or clean spray bottle, with oil

Ingredients
  

  • 1 bag frozen pearl onions Not in sauce, just pearl onions
  • 1 1/2 cup Seasoned Flour See https://www.roguechef.com/?p=3331
  • 1 ea Egg Jumbo
  • Cooking Spray Use a oil mister

Instructions
 

  • Microwave the pearl onions for half the time given on the package.
  • While they partially cook, add the egg to a medium bowl and beat
  • In another prep, the seasoned flour from https://www.roguechef.com/?p=3331
  • Drain the partially cooked onions in a colander and pat them dry with a paper towel.
  • Working with a few onions at a time, coat with the seasoned flour
  • After coating, dip them into the egg
  • And coat again in the seasoned flour
  • After the second coating, place them on an oiled wire rack
  • When all the batches are complete, Refrigerate for 10 minuets so that coating will setup and stick
  • While the onions are chilling, preheat the oven to 400F
  • After the rest and once the oven is preheated, give the onions a light mist with oil
  • Place the wire rack on a sheet pan and bake for ~20 minutes until they are crispy, turning once

Notes

One can do these in an air fryer, 380 degrees for 3 minutes, shake, and 3 minutes more or until crispy.
