Ah, FUDGE!!!
Well, winter storm Elliot has made a hash of Holiday Travel Plans. Madam BadWolf IS NOT HAPPY (mother nature, you are on your own there), as we will forgo our usual holiday family activities and will arrive on Christmas day, not Christmas eve; I’ll pre-prepare some of the holiday treats for the snack tray.
Besides Chinese for dinner on Christmas Eve, a snack spread of candies, cookies, sweets, and savories is always a part of the celebration. This is a collection of various small piece sweets that have graced the table at the lair over the years.
These have also appeared in various holiday gift boxes from the “Patisserie du Merchant Loup.” One popular version included diced (1/4″) dried fruit that had been macerated in a mixture of spices and alcohol (bourbon or rum).
The collection of recipes here is basic; one can perform all sorts of layering or topping to produce some truly spectacular offerings in both appearance and taste.

Fudge is a type of confection that is made by mixing sugar, butter and milk, heating it to the soft-ball stage at 240 °F (115 °C), and then beating the mixture while it cools so that it acquires a smooth, creamy consistency. In texture, this crystalline candy falls in between fondant icing and hard caramels.
Fruits, nuts, chocolate, caramel, candies, sweets, and other flavors are sometimes added inside or on top.
Fudge originated in the US during the late 19th century. The term fudge is said to have come in the 17th century from the interjection fadge, meaning “to fit together in a clumsy manner” and was originally used as a verb. Recipes were printed in many periodicals and advertisements during the 1880s. Its popularity was partly due to the decreasing cost of refined white sugar and partly due to the ability to make it at home without special equipment. Its inexpensive, unrefined qualities made it popular among people looking for a candy alternative that fell between expensive, fancy candies and the cheapest sweets.
Fudge Turtles
Ingredients
- 1 1/2 Cup Spiced Pecans Chopped
- 14 oz Caramel Bites Wrapped Candy
- 2 cups Semi Sweet Chocolate Chips
- 1 can Sweetened Condensed Milk 14 oz
- 1 tbsp Vanilla Extract
- 1 tbsp Heavy Cream
Instructions
- Grease a 8×8 bakign dish
- Combine caramels (unwrapped) and heavy cream in a medium, microwave safe mixing bowl and heat in 30 second intervals, stirring in between until completely melted and smooth.
- Repeat as above with the chocolate chips, sweetened condensed milk and salt in a medium bowl
- Stir in pecans and vanilla into the chocolate mixture
- Pour half of the fudge mixture into the prepared pan.
- Pour the caramel over the fudge layer.
- Pour remaining half of fudge over the caramel, swirl gently with a knife.
- Cover and refrigerate until set, about 2 hours

Apple and Caramel Fudge
Ingredients
- 1 Cup Dried Apples Chopped fine
- 1 Can Sweetened Condensed Milk
- 21 oz White Chocolate Chips
- 3 tbsp Unsalted Butter
- 1 tsp Salt
Instructions
- Place the Sweetened Condensed Milk, white chocolate chips, butter, and salt in a large microwave-safe bowl.
- Microwave in 30-second increments, stirring vigorously in between, until the mixture is totally smooth.
- Once the hot fudge is smooth, stir in the chopped dried apples.
- Pour the fudge in the buttered 8×8 dish and spread evenly with a spatula
- Place the fudge in the refrigerator to cool and set for at least 2 hours.

Peanut Butter Fudge
Ingredients
- 1 can sweetened condensed milk 14 oz can
- 13 oz White Chocolate
- 2/3 cup Peanut Butter Smooth or chunky
Instructions
- Grease an 8-inch square baking tin.
- Add the condensed milk, white chocolate, and peanut butter to a microwave-safe bowl.
- Microwave in 30-second blocks, stirring each time until the chocolate has melted.
- Pour the melted mixture into the prepared pan.
- Place in the fridge to set for 2 hours.
- Once set, slice into 16 pieces.

Microwave Fudge
Ingredients
- 3 Cups chocolate chips SemiSweet
- 1 can sweetened condensed milk 14 oz
- 1/4 cup Unsalted Butter In tbsp chunks
- 1 cup Nuts Walnuts, Pecans (spiced maybe?)
Instructions
- Combine chocolate chips, condensed milk, and butter in a large microwave-safe bowl.
- Microwave on 50% power until chips are melted, 3 to 5 minutes, in 30-second intervals, stirring with each heat, until smooth.
- Generously grease an 8-inch square glass baking dish
- Remove the chocolate mixture from the microwave and stir in the nuts.
- Pour into the prepared dish.
- Refrigerate until fudge is set, about 2 hours.
- Cut into 16 squares.
