Trash Totting

A lazy day dealing with lectures, watching the shop, and writing documentation.

It is funny how a slow day can be filled with personal projects and the “Honey-Do” list, personal projects like preparing for my next certification exam, or sorting out how a “Home improvement” company managed to honk up installing new windows, or even doing the basic research on a solar panel project.

No, matter what I’m doing, I need to eat, and today I’m in the mood for trash. So in specific trash fries, but lacking the fries and the patience to go full ninja on a small bag of potatoes, I’ll reach into the freezer and pull out a bag of frozen potato nuggets. These are good by themselves but even better with a condiment.

Poking around in the fridge, I find ketchup, but that is sooo pedestrian. Perhaps, some of my chili and Szechuan oils mixed into a base of hoisin sauce, along with the required garlic and ginger paste. That should add a bit of a kick to this snack. I might swap out the hoisin for gochujang or mix 1/2 and 1/2.

I could even cook the tots, sauce them, put them in my cast iron baker, top them with cheese, and then bake / broil to melt the cheese, but no, too much time; I’m hungry now.

Ingredients
  

  • 1 bag Frozen Tater Tots
  • 3/4 cup Hoisin Sauce
  • 1/4 cup Chili Crisp To taste
  • 1/4 cup Rice Vinegar
  • 1 tbsp Szechuan Pepper Oil https://www.roguechef.com/?p=3937
  • 1/4 Cup Stock Chicken or Veggie
  • 2 tbsp Grated Ginger
  • 1 tbsp Minced Garlic
  • Salt and Pepper To Taste

Instructions
 

Tots

  • Prepare Tots as per package direction(s)

Sauce

  • Add hoisin, chile sauce, pepper oil, rice vinegar, stock, ginger, garlic, sesame oil, salt & pepper to a saucepan.
  • Bring to a slight simmer and stir until thickened; about 5 to 7 minutes.
  • Taste, Season and Balance Flavor

Assembly

  • Once the tots are cooked, remove from oven and place into a large bowl.
  • Pour the sauce over the tots and gently toss
  • Garnish as desired, and serve

Notes

A quick and dirty snack for a lazy day.
One can mix up the sauce, maybe go with a western bbq sauce, or smother the tots with chili, onions, and cheese and bake once more to melt the cheese.
