Grilled Corn vs. Boiled Corn

It’s mid- to late July, and the local fields are yielding a bumper crop of sweet field corn. Perhaps it is time to cook some corn and enjoy it.

Now, cooking corn is a bit of a discussion around my house. There are many ways to cook it, but the two favorites are boiled or grilled. It depends on how the corn is going to be served. One can never go wrong with boiling just plain on the cob and the table. But if you want to take it off the cob and use it in a salad, relish, soup, or on a taco, the best way is to grill it for that hint of smoke and caramelized sugar taste.

Fresh Field Corn – Boiled

Simple recipe for the best boiled corn

Equipment

  • 1 Large Pot

Ingredients
  

  • 6 ears Fresh Corn Husked, and silked
  • 2 tbsp Sugar Granulated
  • 1 tbsp Lemon Juice

Instructions
 

  • Fill a large pot about 3/4 full of water and bring to a boil.
  • Stir in sugar and lemon juice until sugar is dissolved.
  • Gently place ears of corn into boiling water, cover the pot, turn off the heat
  • let corn cook in the hot water until tender, about 10 minutes.

Simplest and usually the best way to cook fresh field corn

Grilled Field Corn

It wouldn't be summer without grilled corn
Prep Time 15 minutes
Cook Time 15 minutes
Soak time for husk grilled 20 minutes

Ingredients
  

  • 4 ears Corn Husked / unhusked, see notes

Instructions
 

Grilled in Husk

  • Preheat the grill to medium-high, 375-450
  • Peel back the husk, remove the silk, and refold the husk back aroudn the ear
  • Soak the ears in cold water for a minimum of 20 minutes
  • Grill for 20 – 22 minutes, checking for tenderness and rotating to even the blackening of the husk
  • Server with butter, salt / pepper, or elote seasoning

Grilled without Husk

  • Shuck the corn and remove the silk
  • Spray each ear with vegetable spray
  • Place directly over heat on a medium-high grill. 375-450
  • Rotate when dark spots appear and kernels deepen in color (usually about 2 to 3 minutes)
  • until ears are uniformly cooked (usually 10 to 12 minutes).

Notes

A CHEAP and DIRTY Elote seasoning is as follows:
  •   2 Tbsp Chili Power
  •   1/2 Tbsp smoked paprika
  •   2 tsp Granulated Sugar
  •   1 tsp Ground Cumin
  •   1 tsp Garlic Powder
  •   1 tsp Onion Powder
  •   1 tsp Salt, fine grind
  •   1/2 tsp dried lemon peel, optional, fine grind
Mix and store with all other seasonings in a dark, dry place.
