New York Style Avocado Bagel: A Magnificent Breakfast Option
So, the big win of the week of corporate meetings was a shopping bag with a half-dozen H&H bagels. A coworker bought a number to take home (Yes, they are that good) and discovered that she should not fit them all into her carry-on. Hence, some had to be sacrificed, and since I just happened to be in the office, well, my trip back on the train had people commenting on how delicious the bagels smelled.
I’ll break my rule about mentioning any business, but a true New Yorker will know of what I speak of. Think huge chewy bagels toasted to a crispy, nutty outside, smeared with just properly ripe avocado, dashed with a Louisanna-style hot sauce, then topped with a jammy fried egg and seasoned. Side this with a large (32 oz) hot coffee, and you have the makings of a magnificent breakfast.
The recipe, as written, is essential, but one can twist it in so many delicious ways. Start by adding other proteins: lox, thinly sliced baked ham, crispy fried bacon, or even thinly sliced fried chicken. Now, the avocado is great by itself, but if we make a small salad of it with minced onion, jalapeno, and a touch of garlic, this steps into another level of taste and texture. One can add more veggies, like tomato or kimchi, and other taste influences, like citrus or oils. Lastly, I used a Louisiana-style hot sauce; one might replace this with an Asian pepper sauce or even pepper rings.

Avocado Egg Bagel
Ingredients
- 1 ea Bagel H&H Style, Sliced, Everything preferred
- 1 ea Egg Large, Fresh
- 1 ea Avocado Peeled, Pitted
- Hot Sauce to taste
- Salt and Pepper to taste
- 1 tbsp Cooking Oil
Instructions
- Toast sliced bagel until golden brown.
- Heat oil in a frying pan over medium heat and add egg
- Pan-fry until just set, 3 to 4 minutes.
- Mash avocado in a medium bowl; sprinkle with salt and black pepper.
- Spread 1 tablespoon avocado on each toasted bagel half.
- Add hot sauce to taste
- Top with Egg
