Savory Zucchini Fries: Magic Dust Seasoning & Creamy Dip Recipe

Madam Badwolf returned from walking the two barking machines and complained that the zucchini plants had tried to attack the dogs. THIS CAN NOT STAND ACTION THIS DAY!

The quickest and most straightforward method is to drop them into boiling oil, but one must take care to do this properly. One may also bathe them in blisteringly hot air.

First, I’ll select a medium-sized zucchini that is not bruised and feels firm to the grasp. I’ll tail and top then cut these into even batons. Then, I’ll have a triple breading station: station one, basic AP flour; station two, an egg bath; and station three, a wrap in breadcrumbs and parmesan. (I’ll mix Italian and panko bread crumbs here.)

Make sure your oil is, in fact, boiling, 350-375 degrees; use a frying thermometer. Fry in small batches, 8-10 pieces for 2-3 minutes, until golden brown. (I usually make sure they are floating.) Or use an air-fryer to be healthier and safer; boiling oil is sooo unforgiving.

Remove to a draining rig (cake rack inverted into a sheet pan with a newspaper under the cake rack.)

Season while warm, see my “Magic Dust,” and serve warm with a creamy dip. One might even try a selection of dips

If you wind up in the kitchen cooking batch after batch while the rest of the house hovers up the fruits of your efforts, consider it a compliment to your skills and know you have made the garden safer.

Ingredients
  

Zucchini Fries

  • 2 ea Zucchini Wash, and cut to 1/2" x1/2" X 2" batons
  • 1/2 Cup AP Flour
  • 2 ea Eggs Jumbo, beaten
  • 1 cup Panko
  • 1/2 cup Parmesan Grated
  • 3/4 tsp Garlic Salt
  • 1/4 tsp Cayenne
  • Salt To Taste

"Magic Dust" Seasoning

  • 1 tsp Onion power
  • 1 tsp Salt
  • 1 tsp Paprika I like smoked
  • 1 tsp garlic powder
  • 1/4 tsp Dried Oregano
  • 1/4 tsp dried basil
  • 1/4 tsp black pepper
  • 1/4 tsp cayenne

Instructions
 

Magic Dust

  • Add all to spice grinder and process finely. Alt, use a mortar and pestle, and go for broke
  • Taste and adjust as necessary

Zucchini Fries

  • Preheat Air Fryer to 400, lube basket with cooking spray
  • Mix the panko and parmesan
  • One might season the flour with a tbsp of the seasoning mix
  • Setup dredge station for zucchini batons
  • Dredge batons in flours, egg and panko
  • Fry in a single layer for 4-6 minutes, until golden brown and crispy
  • Season to taste, while hot. Use of a spice mix is optional, but recommended.

Notes

You will need to work in batches, and like pancakes, and crepes, the first batch is for the cook.
Pair with just about any dip you can think of, aioli’s, ketchup, mustard, vinegars, etc.
One can experiment with all types of after frying seasonings.  
The “Magic Dust” should yield ~ 2 TBSP, and can be stored as other spices.
